MANGO SALAD
INGREDIENTS: 3 CUPS CHOPPED MANGO, 1 CHOPPED ENGLISH CUKE, 1/2 RED PEPPER SLICED THIN, 8 CUT UP CHERRY TOMATOES, 1/2 CUP FRESH CILANTRO, 1 SLICED SHALLOT, 1/2 CUP PEANUTS.
DRESSING: 1/4 CUP LIME JUICE, 1/4 CUP RICE WINE VINEGAR, 1/3 CUP CANOLA OR AVOCADO OIL, 1 TBS SUGAR, 1/2 TSP FISH SAUCE.
THAT'S IT! IF FISH SAUCE CREEPS YOU OUT, YOU CAN SKIP IT.
