COCK-A-LEEKIE SOUP
INGREDIENTS: 3-4 CUPS SHREDDED CHICKEN, 10 CUPS CHICKEN STOCK, 2 LEEKS, 2 CARROTS, 3 CELERY, HEAD OF GARLIC, CUP OF CHOPPED FENNEL, 1 CUP BARLEY, 2 TBS OLIVE OIL, 4 TBS BUTTER, FRESH PARSLEY AND THYME, 4 BAY LEAVES, 1 TBS SALT AND PEPPER
Sauté the garlic & vegetables in the oil and butter until soft. Amount of vegetables can vary if you want more of some and less of another. Cook barley separately and rinse before adding to the soup. Once the veggies have softened, add everything and adjust taste to your liking. Also remove the bay leaves before serving so no one eats them.
