TIAN PROVENCAL
This is a pic before it was cooked. It turned out great. I just forgot to take the after pic and it was all eaten by the time I remembered!
INGREDIENTS: 5 sliced zucchini, 4 tomatoes, 2 onions, 1/4 cup olive oil, 8-10 cloves of garlic, 1/2 cup parmesan cheese, 2 tbs herbes de provence, 1 tsp salt and 2 tsp pepper.
Fry garlic in onions in the oil until really soft. Put at the bottom of a glass pan. Top with everything else. Bake covered for 20 minutes and then uncovered for another 10-5 until zucchini is done.
