CHAMPAGNE CHICKEN

 CHAMPAGNE CHICKEN


INGREDIENTS: 1 pound thin, boneless chicken breasts, 1 pound mushrooms, 2 shallots, 6-10 cloves of roasted garlic, 2/3 cup parmesan cheese, 1/2 cup olive oil, 1 cup champagne, 2/3 cup heavy cream, 2 heaping tbs chicken paste, 2 tbs salt & pepper, 1/2 cup parsley and 1/2 cup herbes de provence.

Season the chicken with half the amount listed of salt, pepper, parsley, herbes de provence and all of the parmesan cheese. Fry in olive oil on a medium high heat 2-3 minutes a side. Set aside. Add shrooms and shallots to the pan until softened. Add rest of the ingredients and cook for 10 minutes. Add the chicken and simmer for 5 minutes.
