EGGPLANT HEAVEN (super quick & easy)
INGREDIENTS: 4 Asian eggplants sliced , 4 chopped scallions, head of chopped garlic, 1/4 cup sesame oil, 1/2 cup soy sauce, 1 tsp Korean hot pepper flakes (gochugaru) and 1 tbs toasted sesame seeds.
Slice and steam the eggplant until soft (about 5-7 minutes) Set aside. Sauté the garlic in the oil until soft. Mix everything else in that pan until well mixed. Pour over eggplant and enjoy!
