VEGGIE STUFFED FENNEL
INGREDIENTS: Fennel, olive oil, garlic, olive oil cooking spray, Brussel sprouts, leeks, Nature's seasoning, crushed red pepper, bacon bits, mozzarella
Preheat oven to 425. Spray cookie sheet with cooking spray. Roast fennel (sprayed with spray and Nature's seasoning) for 30 minutes. Meanwhile, sauté garlic, oil, Brussel sprouts and leeks until soft. Add crushed red pepper and bacon bits. Stuff fennel, top with mozzarella, cover and bake on 350 for half hour.
