PICKLED DAIKON
Ingredients: 1 large daikon & 1 carrot peeled and cut up, 1/2 cup rice vinegar, 1/4 cup sugar, 1/4 teaspoon crushed red pepper and fresh cilantro
Boil the sugar in the vinegar until sugar dissolves. Add pepper and thoroughly cool. Put everything a bag and refrigerate for at least 24 hours. Drain and enjoy!
