CHICKEN PICCATA

CHICKEN PICCATA










Ingredients: 
-2 packages of thinly sliced, boneless organic chicken
-Flour Mix: 1 cup gluten-free flour, 1/2 tsp each parsley, nature's seasoning, garlic powder, pepper, & lemon pepper seasoning and 1/3 cup grated parmesan cheese

-Egg Mix: 2 eggs, 1/2 cup milk and 1 tsp lemon pepper seasoning

-Sauce:  2 tbs butter & olive oil, 6 cloves chopped garlic, 1 cup chicken stock, 1/2 cup white wine, 3 tbs each capers and sun-dried tomatoes
-Oil & butter to fry chicken in

Dredge chicken in egg & then flour mix. Put on a plate and refrigerate for a few hours. Separate the chicken with wax paper.

Fry chicken on medium high heat until cooked & pour sauce over it. Picture does not do this meal justice. It is full of a ton of flavor!
