ASIAN CUCUMBER SALAD

ASIAN CUCUMBER SALAD

Ingredients: Large English cucumber peeled, 2 celery stalks, 1 tomato, a handful of fresh cilantro, 1 tsp agave, 1/2 tsp Thai curry paste, 1 tbs sesame oil, 2 tbs rice vinegar 


Chop up all the veggies, mix the rest of the ingredients in a bowl, mix everything together and enjoy!

CHICKEN PICCATA

CHICKEN PICCATA










Ingredients: 
-2 packages of thinly sliced, boneless organic chicken
-Flour Mix: 1 cup gluten-free flour, 1/2 tsp each parsley, nature's seasoning, garlic powder, pepper, & lemon pepper seasoning and 1/3 cup grated parmesan cheese

-Egg Mix: 2 eggs, 1/2 cup milk and 1 tsp lemon pepper seasoning

-Sauce:  2 tbs butter & olive oil, 6 cloves chopped garlic, 1 cup chicken stock, 1/2 cup white wine, 3 tbs each capers and sun-dried tomatoes
-Oil & butter to fry chicken in

Dredge chicken in egg & then flour mix. Put on a plate and refrigerate for a few hours. Separate the chicken with wax paper.

Fry chicken on medium high heat until cooked & pour sauce over it. Picture does not do this meal justice. It is full of a ton of flavor!

PICKLED DAIKON

PICKLED DAIKON


Ingredients: 1 large daikon & 1 carrot peeled and cut up, 1/2 cup rice vinegar, 1/4 cup sugar, 1/4 teaspoon crushed red pepper and fresh cilantro

Boil the sugar in the vinegar until sugar dissolves. Add pepper and thoroughly cool. Put everything a bag and refrigerate for at least 24 hours. Drain and enjoy!

STEPPING UP MY SAUERKRAUT

INGREDIENTS: 1 jar sauerkraut, 6 cloves chopped garlic, 3 tbs olive oil, 1/2 chopped onion, 4 chopped celery stalks, 1/2 chopped fennel, 6 chopped mushrooms, 1 chopped tomato, 1/2 cup red hot wing sauce

I rinsed the jar of sauerkraut and set aside to drain while I sautéed all of the veggies in the oil until soft. I added the sauerkraut and wing sauce and heated thoroughly. In the past, I've also used Bloody Mary Mix or homemade chili sauce instead of the wing sauce.

CHINESE PORK & EGGPLANT

CHINESE PORK & EGGPLANT

Ingredients: 2 eggplant, 1 cup chicken stock, 1 tbs crushed garlic, 1 tsp grated ginger, 1 tbs balsamic vinegar, 1 tsp crushed red pepper, 2 tbs honey, 1 leek, 1 pound ground pork, 1 tbs sesame seeds, 1/4 cup fresh cilantro, grapeseed and sesame oil 

I peeled and cut up the eggplant and soaked in salted water for half hour. Meanwhile, I mixed the stock, garlic, ginger, pepper, vinegar and honey in a sauce pan and simmered on low. After I drained the eggplant, I sautéed it with the chopped leek in a little grapeseed and sesame oil until browned. When the eggplant was cooked, I set it aside to cook the pork. I added a little more garlic and ginger to the pork and cooked thoroughly. Finally, I added everything to the pan - the eggplant, sauce, pork, cilantro, and sesame seeds and cooked for five minutes. 

I served the dish with rice & broccoli. It was super yummy!

I STILL HAVE MY TEETH BROCCOLI SOUP

INGREDIENTS: 1/4 cup olive oil, 2 tbs butter, 6 cloves chopped garlic, 1 onion, 1 cup cabbage, 1 turnip, 2 cups broccoli,  3 celery stalks, 5 cups chicken stock, 2 cups milk (almond, soy, regular...) 3 tbs french onion dip, 1/2 tsp cayenne pepper, 1 tsp celery salt 


This soup is so yummy! Chop up all the veggies and sauté in the oil and butter until soft. Add the stock, milk and spices and simmer for half hour. I sprinkled some chili powder on top just to make it pretty.

INGREDIENTS: Cod, olive oil, salt & pepper, mozzarella, tomatoes, fresh basil.

Preheat oven to 400. Drizzle cod with oil, salt and pepper and bake uncovered for 15 minutes. Put cheese on fish and bake another 5 minutes. Garnish with tomatoes and fresh basil. (optional: put a slice of prosciutto under the cheese)

INGREDIENTS: Fennel, olive oil, garlic, olive oil cooking spray, Brussel sprouts, leeks, Nature's seasoning, crushed red pepper, bacon bits, mozzarella 

Preheat oven to 425. Spray cookie sheet with cooking spray. Roast fennel (sprayed with spray and Nature's seasoning) for 30 minutes. Meanwhile, sauté garlic, oil, Brussel sprouts and leeks until soft. Add crushed red pepper and bacon bits. Stuff fennel, top with mozzarella, cover and bake on 350 for half hour.

WHITE MEAT CHILI

WHITE MEAT CHILI

INGREDIENTS:Head of chopped garlic, 1/4 cup olive oil, 1 large diced onion, 2 hot italian sausage, 1 pound each ground chicken & pork, 5 cups chicken stock, 1/2 jar small white beans, 28 oz crushed tomatoes, 4 small sweet mini bell peppers, 1 tbs each cumin & oregano, 1 tsp each salt & cayenne, 4 tbs dark chili powder, 3 tbs molasses, hot sauce to taste and half bottle of beer

Sauté onion & garlic in oil until soft, add diced sausage & brown, add chicken and pork and cook until almost done. Add everything else. Bring to a boil then simmer covered for half hour. Taste and see if you need anything else and enjoy!

 SOUTHERN SAUSAGE AND BEAN DIP INGREDIENTS: 1 POUND GROUND SAUSAGE (I USED HOT BUT SWEET WOULD ALSO WORK), 1/4 CUP OLIVE OIL, 1 CHOPPED ONIO...
