 ROASTED BEET SALAD WITH GOAT CHEESE


INGREDIENTS FOR SALAD: 4 RED & 4 YELLOW BEETS, 1 CUP SPINACH, 1 CUP ARUGULA, 1 CUP CARAMELIZED WALNUTS, 1 CUP CRUMBLED GOAT CHEESE

EXTRA INGREDIENTS FOR ROASTING BEETS: LIGHT OLIVE OIL, SALT AND PEPPER

DRESSING: 1/2 CUP OLIVE OIL, 1/2 CUP WHITE BALSAMIC VINEGAR, 1/2 TSP SALT AND PEPPER, 4 CLOVES CRUSHED GARLIC, 1 TBS MAPLE SYRUP, 1 TSP DIJON MUSTARD, 1/4 CUP DICED SHALLOTS

PEEL & SLICE BEETS. PUT ON A SPRAYED COOKIE SHEET, DRIZZLE WITH OIL, SALT AND PEPPER AND BAKE FOR 20 MINUTES ON 400.

LET COOL.

MAKE DRESSING AT LEAST ONE HOUR BEFORE EATING AND LET SIT ON COUNTER. 

MIX EVERYTHING AND TOP WITH CHEESE!
