GARNISH: FRESH SHREDDED CHEESE (I USED PARMESAN)
I BOILED THE PASTA 2 MINUTES LESS THAN THE DIRECTIONS SAID AND ADDED SOME SALT AND OLIVE OIL TO THE WATER. BEFORE DUMPING IN THE STRAINER, I RESERVED 3 CUPS OF THE WATER.
MEANWHILE, I SAUTÉED THE GARLIC, SHALLOT AND SAUSAGE IN THE OIL IN A LARGE FRYING PAN UNTIL THE SAUSAGE WAS BROWNED AND COOKED THROUGH. I ADDED THE GREENS, SALT AND PEPPER AND SAUTÉED FOR 2 MINUTES. I ADDED THE PASTA AND WATER TO THE PAN AND COOKED ANOTHER 3 MINUTES. IT WAS FANTASTIC!
