VEGETARIAN RATATOUILLE
INGREDIENTS: 4 EGGPLANTS PEELED AND CUT IN PEICES, 1 POUND MUSHROOMS, 1 ONION, 1 CARROT, 8 CLOVES GARLIC, 1/4 CUP OLIVE OIL, 1 TBS PAPRIKA, OREGANO, CORIANDER, CINNAMIN, TUMERIC, 1 LARGE CAN DICED TOMATOES, 1 CAN DRAINED CHICK PEAS, 1/2 CUP FRESH PARLEY
SOAK THE PEELED EGGPLANT IN SALT FOR 1/2 HOUR TO HELP REDUCE BITTERNESS. RINSE AND DRY. MEANWHILE, SAUTE THE OIL, CARROT, ONION AND GARLIC FOR 5 MINUTES, ADD THE EGGPLANT AND SHROOMS AND COOK ANOTHER 10 MINUTES. ADD EVERYTHING ELSE AND SAUTE FOR 10 MINUTES. TRANSFER TO A BAKING DISH. COVER AND COOK AT 400 FOR ONE HOUR.
