VEGETABLE CEVICHE
INGREDIENTS: 1 BELL PEPPER, 1 CUCUMBER, 1 CUP CHERRY TOMATOES, 1 PURPLE ONION, 1 AVOCADO, 1 CELERY (YOU CAN REALLY USE ANY VEGETABLES YOU WANT)
DRESSING: 1/3 CUP OLIVE OIL, JUICE OF 1 LIME AND JUICE OF 1 ORANGE, 1/2 TSP SALT & PEPPER, 2 CLOVES OF GARLIC
1 CUP FRESH CILANTRO
MAKE THE DRESSING, CUT UP YOUR VEGETABLES, MIX EVERYTHING AND LET IT SIT FOR AT LEAST 20 MINUTES.
